Easy, Creamy Beef Stroganoff

I have been wanting to make my mother’s Stroganoff lately.  My mom was an awesome cook and this was in the rotation when I was a child.  It is one that I learned to cook really early in my marriage.  However, my mom uses round steak and I will post her recipe another day.  Actually, I am going to make hers in the Crockpot….soon. 

The other night, I just had to use what I had on hand……which was ground beef.  I love this version anyway.  As you can see, I list low fat ingredients…..until you get to the whipping cream.  What can I say?  It is so worth it but if you don’t have any, use FF Half and Half.  What….none of this either?  No worries.  Just add a little more milk and/or sour cream and if you want to make it richer, add a little bit of butter.

Serves: 4
Ingredients
  • 1/2 chopped onion
  • 1 tbsp butter
  • 1 1/2 lb ground beef (lowfat)
  • 1 can cream of mushroom soup (lowfat)
  • 1 cup water
  • 1 tbsp butter
  • 2 tsp Worcestershire
  • 1 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 cup milk
  • 3 oz whipping cream
  • 1/2 cup sour cream
  • salt and pepper
  • 1/2 box whole wheat penne or gluten-free pasta
Instructions
  1. Saute the onion in the butter for about 10 minutes or until a little brown. Set it aside. Brown the ground beef and add the onions back into it. Add the Mushroom Soup, water, Worcestershire and spices. Let it simmer for about 10 minutes to meld the flavors. Add in the milk, cream and sour cream. Let simmer for another 5 minutes.
  2. While this is going on, boil your water and cook your pasta. I used whole wheat. After it is cooked, add it into the Stroganoff and heat it together.
  3. Serve with a tsp or more of sour cream on top. I wish I had some right now!

i’ve been wanting to try my hand at Beef Stroganoff (for all the things I do make, I’ve never tried this dish!!!) and this recipe looks great! Thanks for sharing. I look forward to trying your mother’s recipe, also :)

Yum! I love beef stroganoff. My husband can’t stand it, but I’ll often make it for friends or extended family when he’s on travel for work.

Beef stroganoff is a staple in this house too but I like the subtle change up in your recipe from mine so I will have to give it a whirl. I was also intrigued by the soy milk in the green bean recipe. Thanks so much for the link up to BeColorful’s Motivated Monday.
