Have you ever watched the cooking show called Hungry Girl? She has some really great ideas to turn comfort food into lower calorie, lower fat treats. I couldn’t follow her recipe exactly on this one because I didn’t have all her ingredients and I like to put my own spin on things. Well, really it is very different. But you know it is all about improvising, right?
GLAZED CARROTS IN THE CROCKPOT
1/2 cup Polar Fuji Apple Preserves
4 tsp Sweet Ancho Chile Relish (or substitute with Raspberry Chipotle or Plum Chipotle…)
2 1/2 tbsp butter
1/2 tsp salt
2 tbsp brown sugar
1/4 tsp nutmeg (optional)
1 tsp cinnamon (optional)
2 lbs sliced carrots (I don’t like baby carrots but if you do…..)
1 onion sliced
1 sliced red bell pepper
1 sliced jalepeno (no seeds and veins)
Sprinkle of salt, black pepper, and cayenne pepper.
Put all in a slow cooker and stir it up. Cook on high for 4 hours or on low for 7-8 hours.
This had just enough heat to make it quite different. I decided after I cooked it that I would leave out part or all of the cinnamon and nutmeg. But that is just me. The preserves and relish had plenty of flavors without the extra spices. However, the Cayenne pepper was really a great touch.
This is my guest post for GROCERY SHOP FOR FREE and TUESDAY’S TASTY TIDBITS. Thanks Dian for continuing to let me submit a post each week to your awesome blog! Check out her site for great free ideas.
Also, since this is a blog party, please link up at the bottom of the post.
Here are some rules or suggestions (I am such a rule breaker myself):
1. You must link back somewhere on your post. Grab a button, if that is your style, or just a link back.
2. Your post has to be about food or dining or decorating a food laden table…..a recipe, information, cookbook reviews, great cooking tools, centerpieces…..food paintings or crafts (like pumpkin shirts)…….etc.. I am expanding my party to include almost anything that has something …no matter how random….to do with food. Thought this would be fun. I also thought it would give us all a little more traffic.
3. Please visit others in the blog party.
4. Can you please follow my blog on Google Friend Connect and/or Facebook and/or Networked Blogs? I need more peeps….haha.
Here are the top visited posts for last week and a really fun pumpkin craft.
Buttermilk Blueberry Breakfast Cake….ooh la la! This was shared with us by the blogger, Claire Cooks. I haven’t made a breakfast cake in years and this looks delicious! I think everyone else thought it looked delicious too!
Second top viewed post was How to Get Rid of Pesky Fruit Flies by Gluten Free A-Z Blog. Great information! I probably read it first myself when scanning all the recipes.
We had our first “non-edible” food (as in pumpkins) blog post included this week….a craft by 52 Mantels. That made me happy. It was such a cute, easy and inexpensive craft made out of colorful socks!
I may be hooking up with a lot of other bloggers:
