Grandmother Opal’s Ham and Cheese Macaroni Salad, Gluten Free Version

As you can tell, I love pasta recipes.  I have already posted an awesome Lemon Spaghetti Pasta Salad (click here), Lemon Chicken Picata (click here), Chicken and Sundried Tomato Pasta (click here),  and Chicken Spaghetti (click here).  And I promise that it won’t stop there…ha.  I particularly love the fact that you can turn comfort food into a gluten-free dish so easily….and still have a comfort food dish for a Celiac.  Just use gluten-free pasta, distilled vinegars and check your seasonings for gluten.  Believe it or not, many have it.  Apple Cider Vinegar is the best choice for vinegars because of the sweet flavor.

This recipe I ate for the first time at my husband’s grandmother’s house in Flomot, TX.  Ever heard of it?  I hadn’t either.  There is a road going in and one crossroad and the road going out.  Some of the friendliest people in the world live there and definitely the most hospitable.  It wouldn’t matter what time of day you showed up on Grandmother Opal’s door step, she would have food for you.  This was her recipe and every time I make it, I think of her cozy kitchen, round kitchen table and laughter abounding.  I think of love and how they just took me in as part of the family. 

GRANDMOTHER OPAL’S HAM AND CHEESE MACARONI SALAD (cook 24 hours in advance)

2 Cups dry macaroni  (I use quinoa pasta if I am making it gluten free)
2 tbsp oil (I prefer olive oil)
2 tbsp apple cider vinegar or distilled vinegar (for gluten free version)
1/2 cup mayo
1 tbsp minced onions
1/2 tsp seasoned salt
1/4 tsp pepper
1 cup diced mild cheddar cheese
1 cup frozen English peas (or 1 drained can)
1 cup diced ham

Cook the macaroni and while it is still hot, add the vinegar and oil.  Stir well and add the rest of the ingredients.  Let it sit overnight in the refrigerator.  This will absorb much of the moisture and really flavor the pasta nicely.  Sometimes I add a little more mayo the next day to make sure it is moist but it is not necessary because each piece of pasta is flavored with the absorbed oil and vinegar.  Yum!

The kids seem to love this pasta salad because of it’s simplicity.  If they don’t like peas, leave them out.  If they like veggies, add carrots and celery.

I made two different salads for my youngest granddaughter’s After Baby Dedication at Church Party.  I used the same recipe except that I made one with Ancient Harvest Quinoa Pasta (gluten free) for my Celiac daughter and the other was with a high fiber Ronzoni Smart Taste penne pasta.

Grandmother Opal sounds like she was so friendly and welcoming, and so did her little hometown. Such nice Southern hospitality.
