While in Angel Fire this past week with my family, I wanted to make some kind of Oatmeal Bars for my gluten-free daughter because she LOVES Oatmeal Bars. So I did a search and came up with a recipe for Black Raspberry Oatmeal Bars. I wanted strawberry flavor instead, so here is my version. The gluten-free version didn’t cut into bars very well but it tasted great. I found this recipe on a blog called Ommy Noms (see below).
GLUTEN-FREE STRAWBERRY OATMEAL BARS
INGREDIENTS
1 pkg yellow cake mix (Betty Crocker Gluten-Free, if needed)
2 1/2 cups quick cooking oats (Bob’s Red Mill, Gluten-Free, if needed)
1 stick of butter, melted
1/2 cup applesauce
1/2 tsp vanilla
1 10 oz container strawberry preserves
1 tsp water
1 tsp lemon juice
DIRECTIONS
1. Preheat the oven to 375 and grease a 9X13 pan.
2. In a large bowl, mix the cake mix, 2 cups of the oats, butter, applesauce, and vanilla. Add the remaining oats a little at a time until the mixture just starts to form big clumps. (Discard the rest.)
3. In a separate bowl, mix the preserves, water, and lemon juice. Press 1/2 the crust dough in the pan. Slather on the preserve mixture, keeping away from the very edges so the fruit doesn’t burn. Sprinkle remaining crust mixture on top.
4. Bake for 18-20 minutes, until the top crust is lightly browned.

This recipe was originally found on the website, Allrecipes.com…..but not by me. I actually saw it on a blog called Ommy Noms when I did a search for Oatmeal Bars.
I substituted Strawberry Preserves for the Black Raspberry and I also made it gluten-free, as mentioned in the recipe. Then I looked around on her blog and found this Red Velvet Brownie that I wanted to get up and bake right then and there. Check it out.
Then I found Cajun Chicken Pasta…..ooh la la! Wanted some of that too. I love Cajun seasoinings…..particularly Tony Chachere’s.
