Kale Chips

by Permanent Posies on June 20, 2011

My new favorite TV show on the Food Network is starring last season’s winner of the show, “Next Food Network Star”, Melissa d’Arabian and the name of her show is “Ten Dollar Dinners”.  I think this woman was born to film cooking shows.  She is such a natural on camera and her food looks awesome.

For Tuesday’s Tasty Tidbits this week, I am sharing an interesting healthy snack (kale chips) that I learned by watching Melissa’s show, .  As usual, I am still guest blogging at Grocery Shop for Free.  I hope you will join in by adding your own recipe at the bottom of the post and be sure to link back to us on yours.

In case you have never eaten kale, it is a form of cabbage that doesn’t form a head in the center.  In other words, it is a leafy cabbage.  According to Wikipedia, Kale is considered to be the most nutritious vegetable in the world with extremely powerful antioxidant properties (quote) and it has anti-inflammatory qualities.

In this recipe, the kale is cooked in a 300 degree oven for about 25 minutes until it is crispy, like chips.  I forgot to take a photo before I cooked it, so I only have after photos.

1 bunch of kale
2 tbsp olive oil
1 tbsp brown sugar
Parchment Paper

Take the leafy part off the stalk.  We are only using the leafy part.  Wash and completely dry the kale.

Line two cookie pans with parchment paper and divide the kale on the two pans.  Drizzle each pan of kale with a tbsp of olive oil and toss it around to sort of coat each piece.  Salt it liberally and toss it again.  Put the pans in the oven at 300 degrees and let it cook for about 25 minutes.  Every 6 or 8 minutes, switch the pans to the other shelf so it doesn’t get overcooked.  Be very careful not to burn the kale!!!!

Take it out of the oven when the kale is crispy and will actually crumble if you squeeze it.  Sprinkle the brown sugar over all the kale.

Melissa serves the kale chips with sandwiches and soup.  Just pick it up with your fingers….thus….the name kale chips.  What a healthy idea!  Tonight I served it as an appetizer and it was really fun.  My husband loved it….and said his usual…”I feel the nutrients coursing through my veins.” haha
