This morning I woke up and decided to spend a “Me” day watching movies and reading magazines after the last couple of very busy weeks. But, a “me” day also includes cooking something fun and since I woke up hungry, I decided to make something I hadn’t eaten in a good while……a Dutch Baby, smothered in maple syrup. Yum!

Also, my sister-in-law gave me a little notebook to keep in the kitchen to write down recipes I come up with. With the Dutch Baby, I started with a known recipe but modified it to fit my supplies. I tried to make one that was just big enough for me and then it became my first entry into my quaint little book. Double it for two people, and it will be a little thicker. Or, really, this could easily be enough for two, particularly if you had something to go with it.
Here is my lazy day breakfast.
DUTCH BABY
1/4 cup Eggbeaters (egg whites)
1 egg
1/4 cup (2 oz.) milk
1 oz buttermilk
2 tablespoons butter
1/4 tsp vanilla
pinch of salt
1/4 + 1/8 cup of flour (well….half of 3/4 cup)
Preheat the oven to 415 degrees. Melt the butter in an iron skillet. Mix the rest of the ingredients in a bowl and pour over the melted butter. Cook in the skillet for about 15 minutes (I forgot to time it) or until it bubbles up and is a little brown on top. This little baby is a little thin, like a crepe. Pour Log Cabin Syrup or honey on top and enjoy!

This is perfect for my Breakfast for Dinner nights. They are my favorite dinners because I like breakfast more than supper. I have always wanted to make this but just didn’t get around to it. Maybe, this time……I hope. Thanks for motivating me.

I make a version of these–a little thicker and baked in a 9×13 pan–and my family goes a little crazy when I serve them. I’m going to try to make it thinner and see how it goes. Yours look fabulous! So nice to get to know you a little.
