Roasted Radishes

I have been at my family reunion this weekend and didn’t do much cooking.  I had a blast and ignored all technology for about 3 days.  I consequently didn’t read all your recipes from last week.  So this week, I will be doing double duty by reading this week’s recipe and last week’s.  I really appreciate you linking up with me.

What I did cook that was very different last week were roasted radishes.  Have you ever roasted a radish?  I have eaten many radishes in my life on salads or with dip but I have never cooked them.  My daughter sent some to me last week that her husband grew in the garden and told me that I should try roasting them for a new taste treat.  So I did…..and just like all my other roasted veggies.  But just in case you havent read those recipes, let me tell you how to roast a radish.

ROASTED RADISHES

2 1/2 cups chopped radishes
1/2 onion, chopped
6 garlic pods
1 tbsp olive oil
1/2 tsp Mrs. Dash (Original Flavor)
Pepper to taste

Toss all the ingredients together and roast at 400 for 20 minutes.

I think you will be pleased with the taste change of a roasted radish.  Sometimes the raw ones are a little bitter to me but these were delicious, though rich.  They were also quite pretty, though I forgot to take a photo of the finished product.

i love roasted radishes–it is amazing how sweet they get. i sometimes dress them with sweet balsamic vinegar when then come out of the oven. thank you for sharing this great idea with tuesday night supper club. i hope you join us on our new monthly format
