Rice-a-Roni Artichoke Salad

Welcome to Tuesday’s Tasty Tidbits and guest blogging with Grocery Shop For Free.  I decided to share a recipe that was originally promoted by Rice-a-Roni but became a favorite of mine years ago at church fellowships.  I have only changed it a little to fit my pantry.   It is delicious and tastes better the second and third days.  It has a lot of crunch to it with the water chestnuts and celery.  The artichokes and olives give it a great Mediterranean flavor.   It is better with fresh chicken but I only had a couple of cans, which the recipe called for anyway.  I think this would be good with capers added to it but, I have never tried it myself.

1 box of Fried Rice flavored Rice-a-Roni
2 tbsp butter
2 cups water
1 jar Marinated Artichokes
1—8 oz can Sliced Water Chestnuts
8 large Green Olives (Stuffed with Pimientos)
1/4 cup Mayonnaise (preferably Kraft)
1/4 onion, chopped
1—10 oz can chicken
1 stalk of celery

Saute the Rice-a-Roni in the butter.  Add the water and cook the Rice-a-Roni until done.  Drain the artichokes and reserve the liquid.  Chop the ar6ichokes, olives, onion and celery.  Combine all the ingredients, including the liquid from the artichokes.  Refrigerate until cold, preferably overnight.  However, we ate some right away and it was pretty tasty.

I’ve made a variation of this for years…we love it! I don’t use water chestnuts or chicken, but I add a bit of curry to the mayo mix. I use green onions instead of onion. Hubby loves this! Come join me for What’s On the Menu Wednesday.

my mother used to make this…but she added a bit of curry powder to it as well. oh…my mouth is watering…i loved it so much..i could eat the whole bowl! thank you for sharing with tuesday night supper club!
