MANICOTTI AND MEAT SAUCE
Sauce
1/2 chopped onion
1/2 lb. sausage
2 lbs. ground beef
1 can tomato paste
2 (28 oz) cans of crushed tomatoes
1/2 tsp red pepper flakes
1 can tomato sauce
3 cups water
Simmer on low in a crock pot for 6 hours.
Manicotti
1 (32 oz) carton of ricotta cheese
1 (16 oz) pkg of mixed Italian cheeses
2 eggs
1 tbsp dried basil
1/2 tsp salt
1/2 tsp pepper
2 pkgs no boil lasagna noodles
Soak the noodles in hot tap water for about 10 minutes or until pliable. Mix the rest of the ingredients, except for half the Italian cheeses. Use the lasagna noodles to roll up part of the cheese mixture, making it look like manicotti. This recipe makes one 9×13 and one 8 inch square pan. Cook at 350 for 40 minutes. Put the cheese on top and cook another 12-15 minutes, to melt the cheese.
