Valentine’s Day Dinner

My hubby and I decided to stay in and enjoy Valentine’s Day at home.  We just got in from out of town and didn’t really want to compete with the Valentine crowd.  So, I decided to cook a steak, baked sweet potato and a salad.  My salad turned out great so, I’ll share the recipe.

I discovered some products at the stock show a couple of weeks ago and later learned that they are also sold at Central Market.

These are manufactured in Texas at the Texas Olive Ranch and they are delicious.  I didn’t even know that olives were grown in Texas!  The vinegar is made from pomegranates and since I had never seen this, I had to have it.  I have not been disappointed.

T-BONE STEAK

Marinade the steak in the Pomegranate Vinegar and Worcestershire Sauce for about 45 minutes.  Sprinkle it with garlic powder and salt.  Grill it for 4 minutes per side.

Cook the 2 sweet potatoes in the microwave for about 4 minutes and then put them in a 400 degree oven to cook until done.  This saves time and takes about 20 minutes in the oven, instead of 45.  I eat my sweet potatoes plain but if you want to be fancy, melt butter on top and sprinkle it with brown sugar.

POMEGRANATE DRESSING AND GREEN SALAD

Pomegranate Dressing:

2 tbsp garlic flavored olive oil (or regular olive oil with 1/4 tsp garlic powder)
2 tbsp pomegranate vinegar
1 tsp sugar

Salad:

Romaine lettuce ( enough for two large salads)
1 stalk of celery
1/2 large jalepeno
3 large olives or 6 small ones
1 jar marinated artichokes (drained and rinsed)
4 green onions (all parts)
6 or 8 strawberries
1 tbsp sunflower seeds

Gosh that looks so good. We are supposed to BBQ steaks this weekend and now of course our weather is going to turn cold and wet. Figures. I will have to try that marinade though or something I can come up with that is similar. Yum!

Happy Ruby Tuesday,
A Valentine’s dinner cooked at home is special.
The salad ingredients sound so tasty, that we’ll try this recipe , but without the Pomegranate vinegar.
Hmm, I wonder if those bottles of oils and vinegars from Texas Olive Ranch are sold on-line, because the basil olive oil looks good.

Girlfriend, what a delicious feast….I’m putting in my request for some of the same for my upcoming birthday LOL. I need to get some of the oils…Central Market? We stayed home also and I made salmon, shrimp cocktail, cheese biscuits, baked potato, brocoli. I still had a box of red velvet cupcake mix I had bought on the square in Granbury so I baked them and they were soooo good. Ok now that we’ve been talking about food, I should have something to eat with my coffee hahaha. Keep writing….cus this reader enjoys every word:)
