Lemon Pie

I am still enjoying the lemons that my friend sent me.  I have had lemon in every glass of tea.  I have had lemonade, lemon chicken, lemon pasta and now lemon pie.  My husband has requested lemon poppy seed cake for his birthday, which is this today, by the way.  I hope I can find a good recipe for that.  Any suggestions?

Then this week, I received a big box of oranges and grapefruit from a friend in the valley.  Wow!  I immediately ate one of each and cut up several so that I can just grab a bite periodically.  I have had such a sweet tooth lately so I hope this will deter me from going for the chocolate.

Saturday, I had some friends over and made a lemon pie!  I must say that my recipe is really good…..even though I say so myself.

LEMON PIE

1 1/2 lemons, juice of
1 1/2 lemon peels, grate yellow only
4 eggs
1/8 cup Eggbeaters
1 1/2 cups sugar
4 1/2 tabs butter
1 9 inch pie crust

Put pie crust in pan and crimp the edges.

Juice the lemons and pour the juice through a strainer.  Beat the eggs with a fork, add the lemon peel, lemon juice, sugar and melted butter.  Mix with a fork thoroughly.  Pour in the pie shell and bake at 350 for 25-30 minutes.

I normally double this recipe and when I do, I put 9 eggs and skip the Eggbeaters.  I just can’t really half an egg and I often need only one pie….so, I came up with the Eggbeaters.

Top the pie with Cool Whip, as you cut a piece.  Refrigerate the pie.

I gotta read this post quick. I hide it everytime my hubby walks by . If I don’t he’ll see it them want me to make him one of these lemon pies. Ha yea right. Like that is gonna happen this week. Do you have to be so perfect?? :) ~Ames

Hmmm, we have loads of lemons on our tree. I’ve never thought of baking a lemon pie sans the meringue. Maybe, it’s time to try. And, look, I have your recipe to try with. Thanks!

Your pie looks delicious. I think that pie is my favorite dessert. (Well, maybe after ice cream.) Happy birthday to your husband! hope you found a good recipe.

This recipe looks delicious! I made a lemon meringue pie for my Dad’s birthday and it was delicious but it takes forever. This would have one less step! Copying this down although my husband might revolt against no meringue.
