Pumpkin Bars with Cream Cheese Icing

My #3 daughter has a favorite Thanksgiving dessert so I thought I would share this family favorite.  I don’t have a photo this time because I can’t afford to make it this week or I will be the only one eating it.  But, it is a great Thanksgiving alternative to a pumpkin pie and makes a large amount for a big party.

Also, the letter this week on Alphabet Thursday is “I” so, this week, “I” is for icing.  YUM!


2 cups sugar
1 cup oil
1 tsp vanilla
4 eggs
1 16oz can of pumpkin

2 cups flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon

Beat first 5 ingredients until fluffy.  Add the the last 5 ingredients and mix until smooth.  Preheat oven to 350 degrees.  Pour mixture into two 9×15 inch greased pans and cook for 20 minutes.  DO NOT OVERBAKE.  Let cool completely before icing.


1—8 oz cream cheese softened to room temp
1 stick butter
1 lb powdered sugar
1 tsp cinnamon
1 tsp milk

Store the pumpkin bars in the refrigerator.  These taste best if refrigerated overnight before serving but if you don’t have time for that, they are still awesome.

You use pumpkins a lot more in the States than we do here. I don’t remember ever hearing about pumpkins as I was growing up.
